Spruce: First look

Three meals at the new Spruce restaurant in Park City have left me mightily impressed. --- Spruce is located in the Dakota Mountain Lodge, a Waldorf Astoria property located just below The Canyons resort, on Frostwood Drive. This is the sister restaurant of the much-lauded Spruce restaurant in San Francisco. 

The beautiful bar/lounge and main dining room feature chocolate-colored mohair wall coverings, Baccarat crystal chandeliers, Carrera marble bar, and faux ostrich upholstery. A top-notch management and kitchen team has parachuted in from San Francisco and the service, even in this brand-spanking new restaurant, is completely dialed in already.

But Spruce is first and foremost about the food. Executive Chef Mark Sullivan has created a menu showcasing fresh, local Utah ingredients; the food is what I suppose you could call modern French. That is, it features items such as sweetbreads Lyonaise, foie gras torchon, veal tournedos, grilled bavette steak, and 3-way rabbit -- dishes with a French pedigree but which feature modern American styling. The result is simultaneously artful and delicious.

Spruce also features an enticing bar menu and a bodacious house-cured charcuterie selection, not to mention the best burger I've ever tasted (made with Niman Ranch natural beef). Add a very well-thought out wine list and, well, a trip to Park City is in order.

Check the Dakota Mountain Lodge for getaway specials. They're currently featuring a deluxe suite (equiped with Viking range and fridge, washer/dryer, etc.) special costing $199 per night, but then you get a $100 resort credit credit each night, good towards either Spruce restaurant or the world-class Golden Door Spa.
