Throughout the summer, Solitude Mountain Resort is the scenic locale for a series of al fresco dinners, served at a communal table right next to Big Cottonwood Creek. It's called the Wasatch Mountain Table Dinner Series. --- The next dinner in the series takes place at Solitude this Saturday, July 28.
For each Wasatch Mountain Table Dinner, chef Michael Richey (formerly of Pago) prepares a four-course dinner with (optional) wine pairings, featuring fresh, local ingredients. In addition, local farmers and ranchers join the party -- a great way to meet some of our local food artisans and producers.
Each dinner begins with an appetizer reception at 5 p.m., followed by a seated dinner.
Menu items for Saturday's dinner include gold potato pillows with sour cream and American caviar; wax-pepper rellenos with Beehive Cheddar, Uinta beer batter, chorizo, balsamic and chive; curried-lamb gnocchi with sweet corn, cherry tomatoes and Thai basil; cinnamon beets with Greek yogurt, cashew brittle and tarragon; apricots with Italian meringue, and more.
In addition to this Saturday's event, upcoming dinner dates are August 18 and September 15.
The cost per person for each Wasatch Mountain Table Dinner is $95 per person for dinner, or $125 with the optional wine pairings.
