Normally, I share one of my favorite recipes for the Monday Meal. However, this week is a bit of a departure: I'm encouraging you to get out of the kitchen and enjoy what promises to be an exquisite wine pairing dinner at Frida Bistro, featuring Michelin-starred, Top Chef competitor Carlos Gaytan, of Mexique restaurant in Chicago.

The cuisine at Mexique earned Gaytan's restaurant a prestigious Michelin Star (the only Mexican Michelin Star restaurant in the U.S.) , which in turn catapulted Gaytan and his restaurant into the culinary stratosphere. He'd go on to compete on Bravo's Top Chef and now, for 2 nights only, he'll be cooking in Salt Lake City. You won't want to miss it.

Frida Bistro will host Carlos Gaytan on Thursday, March 3rd and Saturday, March 5th, beginning at 7 PM.

The 5-course dinner with wine pairings is $140 per person ($100/food only; $40 optional wine pairings). Phone 801-983-6692 for reservations. Seating is limited.

The menu and wine pairings are as follows:

Ahi Tuna Ceviche, Tangerine/Rosemary Aguachile, Pomelo Grapefruit, Radishes, Tostaditas + Zocker Grüner Veltliner Paragon Vineyard, Edna Valley, 2014

Roasted Baby Beets, Goat Cheese, Beet Powder, Poached Pears, Walnuts, Baby Kale, Endive, Warm Balsamic Vinaigrette + Ceretto Arneis Langhe DOC Piemonte 2013

Pan Seared Mahi-Mahi, Tamal de Requeson, Huazontles, Tomato/Habanero Salsa + Lorenza Rosé, California 2014

Stuffed Pork Tenderloin with Chorizo & Dates, Sweet Potato Puree, Chile Morron Salsa, Brussels Sprouts + Paraiso Vineyards, Santa Lucia Highlands, 2014

Roasted Green Apple Tart, Sweet Rosemary Crumble, Cajeta, Apple & Cinnamon Ice Cream, Bacon Powder + Blandy’s Sercial Madeira
