Shallow Shaft Winemaker Dinner
On Jan. 18, Peri Ermidis, Kurtis Krause and the crew up at Alta’s Shallow Shaft restaurant will host a special evening with Italian winemaker Roberto Stucchi, featuring the wines of Badia a Coltibuono. Stucchi produces world-class Chianti, Riserva, Sangioveto and Cultus Boni at the 11th-century Badia a Coltibuono estate in Tuscany, which was sold to Stucchi’s great-great grandfather, Guido Guintini. At press time, the specific wines were still to be determined. The dinner menu includes ribollita with braised Tuscan kale and crisp prosciutto; fried sardines with pomodoro olives and caperberries; crisp pheasant thigh with fried potatoes, dried fruit and verjus brown butter; Chianti-braised beef oxtail with goat-cheese polenta and rucola; and for dessert, a wine-roasted pear with pannetone, zabaglione and Amano Acumare milk. A trusted food informant of mine contacted me to sing the praises of a newly opened restaurant at 2836 S. 5600 West called Thai This. The restaurant offers a menu that straddles both Thai and Vietnamese cuisines, with Thai standards like massaman curry and pad thai, along with Vietnamese pho and banh ganh, a chicken-noodle soup that my informant said was as good as any soup he’s had in his life.
